Homemade vegetable soup

When we’re looking for a comforting meal packed with vegetables, this easy veggie soup is where we turn. It’s made with a light tomato broth and adapts to all seasons. Feel free to use any seasonal vegetables you have on hand. This soup is so good, you will want a batch in the freezer at all times.


ingredients:


850ml / 1½ pints of vegetable stock

2 medium sized carrots

8g / ¼ oz. margarine 

1 tablespoon of olive oil

1 small turnip

1 leek

1 clove of garlic

2 sticks of celery

1 medium onion

1 tablespoon of fresh parsley and thyme. You can use dried but fresh always gives a better flavour
